Carefully not to go to minimal. I am not sure if a node with 512 MB RAM would boost the network or slow it down? Better to get a new Raspberry Pi 5 with M2 SSD. Low power, very fast and reasonably affordable. Can be used both as Grin node and as Linux or Windows PC.
Raspberry Pi 4 also works, but when available the Pi 5 would be the beter buy IMO and more future proof.

512 MB may work, but at least 1 GB of free memory I would recommend as a minimum, based on experience. You can add more swap space via the hard disk, so 30 GB might be barely enough if you install a light operating system like Debian and add swap space.
For another project I’m working on we’ve looked at Dappnode as a way to deploy our node software… it’s an OS like Umbrel for hosting nodes primarily ETH, but there are tons of other blockchain nodes that are options, it’s completely open source and permissionless so anyone can upload any package there, but if a GitHub maintainer on the project signs off and some other things then it can get elevated as curated…
I’ll look to launch a node on my local setup btw as well…
